Salmon Patties

1 egg
½ cup breadcrumbs or crushed crackers
1 tablespoon minced onion
1 tablespoon lemon juice
Salt and pepper to taste
2 tablespoons oil (for frying)
Instructions:
1. In a bowl, combine the salmon, egg, breadcrumbs, minced onion, lemon juice, salt, and pepper.
2. Mix well and form into 4-5 patties.
3. Heat the oil in a skillet over medium heat. Cook the patties for 3-4 minutes on each side, until golden brown.
4. Serve alongside the scalloped potatoes for a comforting, balanced meal.
